whenever i do apple butter, i just keep simmering for seemingly ever. trick is remembering that it will thicken more when cooling. crockpots are good for this. the stupid small no temp. control 'dip' pot that came as a 'bonus' actually is pretty decent for this purpose.

i enjoyed the thinking out loud :) nice to know i'm not the only one who does that ;)
