A divinely simple but delightful cookie to make and a keen favorite in my family; Ross Cookies can be tossed off quickly and had with tea.
Ross Cookies
1/2 Cup butter, softened
1/2 Cup margarine
1 cup brown sugar, packed
1 egg yolk
1 Tbs vanilla
2 Cup flour
1 bar of chocolate (either milk or dark, whatever you like best)
1 Cup finely chopped nuts
Preheat oven to 350F
Cream together the butter/margarine with the sugar. Add the egg yolk, mix some more. Add vanilla and then slowly add flour. Once that is well combined you will then take the dough and spread it out and pack it into either a greased 9x13 pyrex casserole dish (a metal pan works fine too) or a jellyroll/cookie sheet. The important thing is that it has sides to hold everything. Place that into the oven for 15-20 minutes. It will be a pretty golden color when ready.
While that is in the oven you will take a big bar of chocolate and chop it up into pieces. You can use anything from Hershey's to fancy-pancy dark chocolate that is made by silent virgins who have no knees or something.
When you remove the cookie from the oven you will spread the chopped chocolate all over the cookie -leaving a 1/4 inch border an all sides. Just let the chocolate melt and once it has melted you can take a knife and spread the chocolate all around. Let that sit for about ten minutes. Then sprinkle chopped nuts (We are a keen fan of walnuts in my family) all over the chocolate and again let things sit for about 20 minutes. Maybe half an hour. Then cut into squares while the cookies are still somewhat warm.
You may not have any decent willpower and have to have one or two. It will be so delicious and very comforting.
