I went on a cooking bender that was born out of necessity. Really. I swear.
Yesterday I made ice cream which called for six egg yolks. I had six leftover egg whites. (difficult math I tell you) I needed to make my cake for the week so I decided to make angel food cake. It is a good cake that can be matched with a lot of things. Plus you can feel a little better about stuffing your face with cake because it is fat free. Really. Can't make this stuff up.
Anyhow so by making angel food cake I now had six left over egg yolks. A girl just can't even out.
I then made aioli to serve over sauteed asparagus. With the remaining egg yolks I made lemon curd -which you can pair with the cake. Awesome sauce all around.
For the main course for dinner I sauteed some chicken, bacon and mushrooms in some white wine and let that reduce. I then added some freshly chopped Italian parsley at the end and served that with some pasta and pecorino cheese.
Lovely stuff I tell you.
