Parents were in charge of bringing snack. At the time, we had a kid with a dairy sensitivity and one with a wheat allergy, so there were limits, but for the most part it was pretty easy.
I bring this up, because someone I know who has started the co-op has brought up some of the things I observed as a parent in a co-op. Pretty much nothing changes.

It should be noted that a number of parents were quite diplomatic and said, "hey part of the co-op experience and dealing with the snack issue is that we will be exposed to different values about what snack means. For some it might be a more narrow definition, and for others it might be a little more liberal, so chill. It's all good." (when in doubt, take the Matthew McConaughey approach to snack.)
