sugar and butter and zombies
Mar. 15th, 2014 04:58 pmI tried a mint chocolate chip cookie recipe awhile back and it was just okay. So I decided to mess about with it and make it more pleasing to my ideas of cookiedom.
I dropped the mint chocolate and stuck with regular chocolate chips, (partly because the mint chocolate candies were just too waxy.) and in a moment of improvisation I used a different method of dye.
You begin by creaming together 1 cup softened butter with 1.5 cups of granulated sugar. You know the drill by now. It should be fluffy and if you are using a mixer, make sure to scrape now and then. This isn't lazy time. Then you add 1 egg, 1 tsp of vanilla, and 1/2 of mint extract. Now you could add more if you want a more pronounced flavour but I tend to hold back a bit so you don't have cookies that taste of toothpaste. Unless that is your bag, then go for it. If you have green dye you can put in about 10 drops of the stuff. I realized today as I was making the cookies that I didn't have green dye for once. I keep a lot of green dye on hand since Senor Onion is a minecraft addict and sometimes food ends up minecraft themed. Instead I took some spinach and put it through the food processor with some milk, and then strained everything and the milk was all nice and green. Brilliant. I put that into the cookie dough. Probably just a few tablespoons. Now for the exciting world of dry ingredients. Sift together 2 3/4 cups of AP flour, 1 tsp baking powder, and 1/2 tsp of salt. If you are in the UK, I suggest using OO flour as it is the closest thing to American AP flour. Seriously. Try it out. It is the most useful thing if you are using American recipes. I use it for cakes and cookies all of the time and they turn out so well that Mothers slightly hate me when I show up for the school cake sales with my goods. The important part is acting like it is no big deal that you just made a cake, several cupcakes, and some cookies. If you can, toss your hair like you are the Duchess of Cambridge. But ONLY if you feel confident that you won't hurt your neck. Then you add the chocolate chips. How many? In the UK, they seem to be sold in small packages so you will need about two. You in America know to just grab a bag and go to town. Mix mix mix and hey how about that you have some cookie dough. Delicately green, not too lurid, though if you want to do lurid, add more green dye.
Spoon balls of dough onto a lined/greased baking sheet. (you know how you do things.) and pop in an oven (140c/350F) for about 8ish minutes. I have no idea how your oven runs. Mine runs a bit hot these days. Keep an eye on things.
If all goes well, they should look like this. (I made some pink cookies for Miss Biscuit. She says mint ones are too spicy for her. Like grown up toothpaste.)
