Let's bake!

It is raining/snowing today, there is chaos in London and it is April Fool's. Let's think of other things. My hair is looking great and I baked cookies yesterday. (those two have nothing in common, but it is good to share the little things)
I ended up making Hermits, which are a cookie more common to New England. They are slightly spicy and I found the recipe a good way to use up some things and not use too much of things I was short on. Economical and frugal.
The recipe came from the Fannie Farmer Baking Book edited by Marion Cunningham. If you talk to people in the book/food world, everyone has something delightful to say about her. She also writes a terrific cookbook. She is equal parts common sense and inspiration.
I was looking to use up some fried fruit or nuts that were in the cupboard. And this fit the bill.
I made a few of my own modifications to the recipe as I lacked shortening and I like more cinnamon in my cookies.

1/2 cup of butter, softened
1 cup of brown sugar
1/4 cup of water
1 egg
1 tsp cinnamon
1/2 tsp nutmeg
1 3/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 cup walnuts, roughly chopped
1 cup raisins
Preheat the oven to 375F
Okay la-di-da here we are. Cream your butter and brown sugar. As always I like to taste that. Because it is a delicious combination on its own. Mix in the water, egg and spices. Then slowly add the flour, soda and salt. Finally you fold in the raisins and walnuts.

It does make for a slightly sticky dough. Drop spoonfuls onto greased/parchment-lined pans and bake about 8-10 minutes.
Put them on a rack to cool. Voila, you have cookies.

Senor Onion woke up from his nap to cookies cooling and the house smelling rather nice. He even got to have a warm cookie.

Date: 2009-04-01 08:53 pm (UTC)A high/low moment was hanging out with a bunch of very nicely educated Cambridge men and I made some reference to pants (and I meant like trousers) and they all broke down into giggles.
Though the copious amounts of beer and whiskey that had been consumed probably didn't help either.
And then for the rest of the evening they kept giving me a hard time about me and my pants.
Fanny, pants... always quality material to work with.
