How to get your daily dose of butter
Sep. 4th, 2008 08:52 amGood morning my buttercups.
Here is the recipe for Kentucky Butter cake. It won the pillsbury bake-off in the early sixties. A few years ago my Mom gave me a cook book filled with various pillsbury bake-off winner recipes. Fantastic book with lots of glossy pictures. It is a nice variety of things. Some recipes involve cake mixes and jello pudding and others are completely from scratch. So no matter what your skill set is for baking, you can find something you can do. As for the cake itself, it was delicious. You get these pockets of sugary butter goodness in your cake. Mr. Jenner said it seemed very scandinavian with its rich buttery flavor and just the simplicity of its presentation. You bake it in a bundt or tube pan. (angel food cake pan, if you aren't familiar) You could probably dress it up with fruit if you were feeling the need to balance things out. I would suggest having this with coffee or tea. You need something to kind of bring you back from the edge of a diabetic coma.
I gave my son a taste and he said in a manic high-pitched voice, "CAKECAKECAKE!!!!!!!"
So you know its good.
I think today I will make a chicken pie. I have all of this leftover chicken and I made stock with the bones and things. I also have these turkey breasts in the fridge that I need to do something with. Off to the cook book shelves to see what I can find.
