I cross post now and then....
Nov. 6th, 2003 04:55 pmI was in a fishy sort of mood last night and came up with this sort of pasta dish with salmon and tiger prawns. It wasn't terribly original, but it is fairly easy.
I marinated half a pound of tiger prawns in white wine olive oil, garlic, italian parsley, bay leaves, and lemons.
Later that evening in a pan over medium I sauteed melted 4 tablespoons of butter, added three cloves of minced garlic, and let the garlic cook until it was golden. I then added chopped green onions, sliced red bell peppers, mushrooms and a bit of salt and pepper. I then added the marinated prawns.
Meanwhile back at the ranch (one of my favorite phrases) I baked the salmon with some lemon slices on top and underneath for twenty minutes.
I cooked up some fettuccine threw that into the prawn and vegetable mix added a bit more wine, because I am of the mind that wine makes everything better. Or at the very least, more cheerful.
I placed the pasta and prawns on plates and then placed the divided salmon on top, with the baked lemon for garnish. Because we must do Martha Stewart proud now and then.
My oh so kind boyfriend took a liking to it, but I have also said of him, that I could cook dirt and he would eat all of it out of politeness because I made it.
Go forth eat.
